Homemade organic Apricot Jam

Recipe
3.500 kg pitted apricots

1.500 kg caster sugar

fresh juice of 1 lemon

1-1/2 tsp nutmeg

1 tsp cinnamon


Method

cut the pitted apricots in small pieces
put apricots, sugar, spices and lemon juice 
in a big saucepan
cook at medium heat until boiling
then reduce the heat and
let it boil for about 3 hours
until it's a little bit darker
