No.1    Old Fashioned Spiced Apple Pie

Crust No.3

(I used a 18 inch. pan, so I froze the remaining dough)

1 - 1/2  cups shortening (veg)
3  cups flour
1  egg (lightly beaten)
5  tbsp extra-cold water (plus more if needed)
1  tbsp vinegar
1  tsp salt


Filling

4-5  medium Fuji apples
2  tbsp white sugar
1  tbsp pomegranate paste (or molasses)
1  tsp cinnamon
1  tsp ground ginger
1/2  tsp ground cloves
1/2  tsp ground cardamom
1/2  tsp lemon zest

No.2    Apple Sauce French Toast

two servings

2  thick slices of fresh white (or cinnamon swirl!) bread
2  eggs
1/2  apple sauce
1/3  cream
1  tbsp light brown sugar

pinch of cinnamon optional

butter for cooking

No.3    Roasted Tomato Soup

two (big) servings

6 pints  pomodori datterini (sweet plum tomatoes) cut in half
1  carrot
1/2  cup celery (even leaves)
1  big red onion
2  cloves garlic

basil and thyme as you like

sea salt & pepper
extra vergine olive oil

method

blend all the ingredients cut and seasoned 
and put them on a sheet with  baking paper
let them caramelized in the oven on high temperature 

then remove from the oven and transfer it in a deep 
casserole and cover with vegetable stock, let boiling 
for at least half hour.

at the very end add 2 tablespoon of heavy cream and 
mix with the electric mixer until smooth and creamy.

serve whit croutons and     Enjoy!
